Splitting a Composite back into two protocols?

If you create a composite and want to reverse that process, you can use the Undo feature. That only works if you want to Undo all work that followed creation of the composite, and only if you want to do it in the same session. There are options available if you want to get your data sets back out of the composite, but you'll have to re-associate them with the appropriate protocols. If your protocols were subsumed into the composite and you don't have any other copies you may have to copy/paste the important elements and rebuild the rest of it.
